MEDITERRANEAN RED LENTIL SOUP AND AVOCADO SALAD RECIPE

Hey, lovelies! Here is another great 30-minute recipe for a simple weeknight or weekend dinner. This recipe does not take a lot of time and has a quick, simple clean up. I can remember the time I had lentil soup, and it was amazing! I don't think I could find this soup with taste anywhere. This place was called Pita House, an amazing, awesome Mediterranean restaurant. I don't think I could find their taste anywhere else. However, I couldn't found this taste anywhere else after I moved. Anyway getting back to the point....... this recipe was actually found by my mom. For our first time making it, the soup actually came out pretty good. But be warned, it is not good for the next, eat it while it's hot! :)


Recipe:

2 Carrots

1 Whole White Onion

2 Tomatoes

Vegetable Stock or Vegetable Broth

Cumin powder

Tumeric

Garlic powder of Ginger Garlic paste

Oregano

Rosemary

Salt

Red Chili Pepper Powder

Red Lentils (Pre-soaked overnight or a few hours before)

Cilantro

Lemon/Lime

Whipping Cream (optional)

Olive Oil


In a large pan, heat some olive oil, and throw in 1 diced whole white onion. After browning the onions for a little bit, add a small of garlic powder or ginger garlic paste. Next, add your chopped carrots, tomatoes, along with salt, cumin powder, turmeric, oregano, rosemary, and red chili powder to taste, or your liking. Add your pre-soaked red lentils and vegetable stock or vegetable broth. Let it simmer and cook for a while. After cooking the mixture, let it cool down for 10-15 minutes before blending it. After it has been cooled down, using a hand blender, blend the mixture into a thick texture/consistency. You can also use an electrical blender if you do not have a hand blender. Finally, cook the soup for another 10-15 minutes. Be careful it will pop, due to heat! For garnishing add a bit of lemon or lime juice on top, with some cilantro and drops of whipped cream (optional). Serve hot!


Now soup won't just fill you up, so I had also made a side salad to go with it. I love this salad because I love avocado.


Recipe:

1 Whole avocado

1 Whole Red Onion

1/2 Cucumber

1 Whole Tomato

Olive oil

Lemon/Lime

Black Pepper

Salt


Toss chopped 1 avocado, 1 red onion, 1/2 cucumber, 1 tomato with olive and lemon/lime juice with black pepper and salt in a large mixing bowl. Can also serve chilled too.
