Now for people that know me personally, I am a huge foodie. This means I love food and I love try anything new, especially from different cultures. My favorite type of cuisine is Asian, whether it be Indian, Chinese Japanese, Korean, Thai, you name it.
Now usually in K Dramas, there are a lot of food scenes. Plus I have been to many Korean BBQ. Once the pandemic started back in March, I was craving Korean food so much, but nothing was open. So one day I decided to try making it on my own. I decided to start with something easy, that I could also do in 30 minutes.
Kimchi Fried Rice is an awesome, delicious meal that can be made in 30 minutes, and requires so little ingredients. Its so colorful and yummy for those cold days as well.
After trying different kimchi brands, I really like this one. It can be found in Costco or any other online store. It is also a famous brand in Korea and it is exported from there too:
Here is my recipe that I have modified:
Kimchi
1 White Onion
1 Bunch of Green Onions
1 Ginger
4 cloves of Garlic
Black Pepper
Salt
Gochujang Sauce ( found at your local grocery store in the international foods aisle)
Rice Vinegar
Soy Sauce
1 Egg
Bacon, Pork Belly or Ham (optional)
1/2 cups of Rice or leftover rice (1/2 serves 2 people, cook depending on how much you eat)
Seasme oil or Olive Oil
1) Cook 1/2 cups of white rice (this serves 2 people, cook depending on how much want or eat)
2) Cut and chop Ginger, and 4 Garlic Cloves into small pieces. Cut the white part of the Green Onion stalks and set aside with Garlic and Ginger
3) Cut and chose 1 whole white onion and set aside. Cut the green part of the green onion
4) This is optional. Cut your meat, such as bacon, pork belly or ham into pieces and set aside
5) In a large pan, heat seasme oil or olive oil. Add the ginger, garlic and the white part of green onion together. Cook for 5 minutes.
7) In another pan start cooking your meat (optional)
6) Add white onion, salt, black pepper and a tablespoon of rice vinegar. Cook for 10 minutes until a light golden brown appears. Add in Gochujang sauce with the meat.
7) Add white rice along with a spoon of soy sauce.
8) Finally add Kimchi (i would say like 3 big scoops of it) add some more Gochujang and soy sauce to taste.
9) Add Green Onion.
10) Make a sunny side or fried egg to your liking and add it to tope of fried rice. Done! Ready to Eat!
